It’s not every day a young, home-grown Western Australian distillery takes out a best international craft whisky award.
But deep in the south-west Limeburners is doing just that: producing world-class amber liquor.
About Great Southern Distilling Company
Founded in 2014, commercial production of WA’s first legally made single malt whisky began the year after. The distillery is located at the Princess Royal Harbour to take advantage of Albany’s clean air, pristine water, local produce and the cool sea breezes.
The start-up process of founder Cameron Syme was much longer. Syme had spent 16 years working towards his dream, following in the steps of his Scottish forebears.He researched distilleries throughout the UK and finished off his knowledge base learning from Bill Lark, affectionately known as the Grandfather of Australian whisky distilling.
Released in 2008, the first single malt sold out within one month. With demand outstripping supply, other suitable locations in the south-west were sourced.
A sister distillery, the Margaret River Distillery Co, was then opened to supply top quality local wine and beer and, of course, premium whisky and spirits. Closer to its Albany home, a third distillery was opened in the Porongurups in late 2017 to produce the Tiger Snake Australian Whiskey.
Limeburners Take out Awards
The awards began the year of release winning a bronze medal at the London International Wine & Spirits for Cask M2, the first barrel of WA’s single malt whisky. Dozens more awards followed year after year and in 2017 Limeburners took out the coveted best international craft whisky award.
While the list of awards is long for Limeburners’ outstanding product, the organisation has also been recognised for its business acumen. It was named Business of the Year at the 2013 Regional Small Business Awards, and in 2017 the distillery was named the Telstra Western Australia Business of the Year award winner.

Limeburners Directors Cut Whisky
Known as the top of the Limeburners’ shelf, the Directors Cut has a full-bodied taste and smooth finish. Limeburners Peated Single Malt M209
Barrel M209 has been smoked with peat and matured in a 200-litre ex-bourbon American oak cask. The taste offers a spice punch and a little oak and honey. Its finish has been described as medium to long filled with dry cereal and juicy malted barley. A splash of water in the glass gives it complex, smoky aromas. Limeburners Single Malt Sherry Cask
This Sherry Cask has complex flavours with a full taste and smooth finish. Distilled in a small batch copper pot stills for a complex and elegant single malt whisky. Matured in second fill bourbon barrels before finishing in an Australian sherry cask. Mix in water for sherry and vanilla aromas with honey, raisins and buttery caramel.
