Sherry is a fortified wine that continues to grow in popularity around the world. When a neutral grape spirit is added to the wine it begins to stop the fermenting process by killing off any yeast that remains.

This makes the Sherry have a high alcohol content, similar to most fortified wines.

The Solera method is used to age Sherry. This method involves regularly rotating casks to blend older and younger sherries together.
