Fortified wine typically has a greater alcohol content than most wines because they’ve been mixed with distilled spirits.

Usually, the spirit of choice is brandy but it can be blended with any neutral spirit that’s been distilled from grapes, grains or sugar. Originally, fortifying wines was a great way to preserve them.

These days, other fortification methods exist but the method is still used because of the variety of flavours that can be added.

There are many aspects that can determine the way a fortified wine will turn out such as; the type of spirit that is used, the time in which the spirit is added during the fermentation process and any use of additional aromatics or flavours.
